This question is all about the various roles played by Tamsin Greig.
The gift shop owner is Fran Katzenjammer from Black Books.
The magnetic surgeon is Green Wing's Dr Caroline Todd. For some unexplained reason, her hand becomes magnetic on a full moon.
The lovelorn perfumer is Alice Chenery from Love Soup, who works on a perfume counter in a department store.
The apple delicacy is the hardest part of the clue... it points to Friday Night Dinner's Jackie Goodman and her signature "Crimble crumble".
The reason someone would need to be in Hungary is because Greig's most famous role outside of comedy is that of Debbie Aldridge in Radio 4's The Archers. Due to Greig's various TV roles, they moved Debbie to Hungary, freeing her up... but she still appears in the show from time-to-time.
