I made a big pot of beef and beer stew earlier which was quite delicious. I used quite strong beer though (6%ish), so I might try something a little weaker next time. I really do want a beer now though.

Technically speaking - as long as you boil the stew (which you should) - the alchohol burns off - so it's the flavour of the beer you end up with.

This is a common misconception, alchohol does not burn off entirely, this is why you have to be careful when cooking for children with alchohol, sauces etc. A lot is evaporated but it very much depends on the strength and type used.

And when you add it.
If you glug a bottle of red wine into a part-cooked stew then just pop it back into the oven, it will still have alchohol in it.
It will also taste like shit.
Added at the early, cooking down phase it should all boil off.
Sherry Trifle, on the other hand, should be illegal.

I didn't boil it as I was slow cooking it. It was quite a dark ale though, so maybe that's why it had such a strong flavour.

The old adage is the longer you stew it the better it will taste, slow cookers should be used like an aga, at least eight hours of cooking.
