As for race of Jesus official Catholic teaching is it's irrelevant. His image should be shown to reflect the country where he is being worshiped (e.g. black in Africa, white in Europe, orange in Newcastle).
The stories are edited versions of myths, parables etc of the time. So he can switch from being black to Asian (one thing he probably wasn't was white).
More to the point he's representative where his "Jesusness" was separate from his physical body. So he may have been black but he wasn't black.
As for his parents it is hinted Joseph married Mary after the Holy Spirit came over her. Or it may be that Joseph was inhabited by the holy spirit.
Either way not really important. It's what not who Jesus was.
