Well Zee, I eat all of the raviolis.
What are you eating? Page 657
I've tried tinned and fresh and frozen and made them myself but have never been much impressed.
I usually get those fresh ones in the chilled section that only take about 3 minutes to cook in boiling water, and a pot of yummy sauce.

I think I expect a creamy centre, like runny. I prefer canniloni.

Yes, they are rather nice like that. I like making up a quick tomato sauce of passata, garlic, chillies, lemon juice and shallots to douse them in.
I wonder if it would be nice or even possible to create a garlic butter sauce, the same you get in a chicken Kiev to "ooze" out of the ravioli.
All Italian food is a very good idea.
Amen!
Have you ever had carbonara done the traditional way? You don't bugger about with cream, you just use eggs and parmesan. It's got a much stronger taste and is ridiculously delicious.

No but I'll give it a go!
Edit: just Googled a recipe. God damn that looks nice (and simple).

The main thing to make sure of is that you keep plenty of the pasta water to hand. You need it for the final sauce or it gets very thick and sticky. Use enough pasta water and it slips down nicely.
Cheers Ben.

Just made it. Good stuff! Better than cream.
