We get as close to fully mapped out as possible before starting, but the letting the other person write an entire draft before I touch it part, no thanks.

Basically there is no right way, so just try the different ways you can think of and see what works best for you.

My instinct when reading anyone else's work is just to rip it apart and rebuild it in my own style.

Therefore I think I'm going to suggest more of a piecemeal approach (one or two scenes at a time) to avoid that urge, and make the back-and-forth rewriting process a bit more gentle.

And one may be good at storylines while the other could do the funnies.
