Dear me no Lee. By all means slow cook your lamb shanks with a whole bottle of red wine, herbs, garlic, leek, onions, etc... but always serve with mash! Creamy, creamy mash!!
Depending on the time of year I'd either do;
Parma ham wrapped around soft goats cheese and figs followed by a paella with crevettes, squid, mussels and chicken and then griddled peaches in honey with marscapone.

Smoked salmon on blinis, followed by roasted leg of lamb studded with garlic and rosemary with sliced potatoes cooked in the fat dripping from the lamb above and roasted butternut squash and carrots. Then a really rich bread and butter pudding with home-made lemon ice cream.
Any time of year guests will be liberally plied with alcohol.
