I love stop motion; it's laborious work but the results can be well worth the effort. Are you using a digital camera or a cam corder. Cam Corder is easier. What frame grabber are you using? There's various options. Here's a good review of some:

Re lip synching. You need to record the voice track first. Then use a time track to work out the appropriate mouth shapes at the appropriate frame. Software like Magpie will make life easier. But, as Dolly says, I'd try to use voiceovers, to start with. Check out this chief - very simple claymations, but effective:
