Yeah Cornish Cruncher if you like that slightly crunchy crumbly type, not my favourite strong type tho, I recommend 'Tickler' or standard Canadian cheddar.

Canadian is okish but only one step up from Dairylea to my taste buds ! Needs a cheek sucker !

Well Tickler's a fine cheese tbh, strong but not harsh like some are, made for crackers, one of my favourites now.
CC's a bit OTT for me and I hate the texture but if you like very strong tasting cheddar then it may suit you.

Before I consult some cooking websites does anyone here know what you usually have with beef wellington? And is there a sauce especially for it? Can't even remember having had it before tbh. All I can think of on taste grounds is mushrooms and maybe a red wine mushroom and onion sauce. What goes best with a beef wellington please? Roast potatoes? Ta in advance.
I can't help you with that aside from that I think people have Yorkshire puddings with beef. And roast potatoes should be eaten with everything.
