Well, I'm not sure if there are different varieties but beetroot salad leaves are quite common. I would have thought or hoped at least that with beet farming, that traditional America would have utilized the whole vegetable. If were talking about tradition things, such as beanless chilli.

The funny thing is, I don't like the mix of textures created between rice and beans. But why not have pork or chicken in your rice instead? Sez the vegetarian.
