I have a kindle with keyboard. The keyboard is for searching for words in books or documents (like in a pdf file) or writing notes. There is also a rudimentary internet browser, but it's so awful you would only use it if you had no other option available (can't open new windows/tabs, crashes all the time, can't open webpages that have flash elements). I find the ability to search for words invaluable as you can't flip back through a book to re-read a section in the way you can with a real book, so being able to search for a word or character name is really helpful. It also allows you to search the kindle store and buy books from your kindle.
The WiFi works like it does on your laptop. ie. if you don't know the WiFi password you can't access the network. I would get the 3G version, though, as it means free 3G basically everywhere, and means you can sync up your books when you're out and about (so that when you open the kindle app on your computer or phone it knows which page you were on). Also means that if you do ever have to use the web browser you can for free.
I don't know what the touch screen one is like. I do find the keyboard very useful, (I don't think I'd use my kindle as much if I couldn't search through books and documents) but it is awkward to type on.
