Are they bramleys? Hugh has a really good, very very easy recipe for an apple sauce on the intywebs.
I don't know what type they are. Know how I can find out?
Google will have pictures. for a sauce you need a cookign apple like a bramley, for chutneys you're best with an eating apple. Reason is that cooking apples will break down when they're stewed, and eating apples hold their form (near enough).

I have a jar of spiced apple chutney somewhat coincidentally enough. Lovely stuff, although I always imagine it's the type of thing you'd have on the Xmas dinner.
