You can buy it from butchers who have a game license. My butcher is one of these- and for this I am grateful. People have a bit of a squeamish thing with game, but really it's much more ethical than most 'supermarket meat'.

I don't think you can buy it commercially here. There are enough deer running through my neighborhood that I doubt I'd ever pay for it.

My neighbor hunts a lot and gives me all the venison, quail, duck and hog that I want. The last wild hog he shot was made into EXCELLENT spicy ring sausages. I usually throw one or two on the grill whenever barbecue.

Jealous. I'm a massive hypocrite, so I wouldn't kill it myself, but I'd love to have a constant supply of free game.

If you don't have a noodle steaming bowl- boil them up (300ml water) with some carrots and peppers (so the carrots and peppers are still crisp)- throw in 1 tsp miso paste, 2tbsp sweet chilli sauce and 2 tbsps soy sauce. Serve with the soup ! Sooooo good for under 10 mins !

I tried some wild boar sausage recently. Bloody lovely, IIRC.

Tesco's sell venison, do they have a game license?

I'm not a huge fan, but here in Texas they tend to turn most of the meat into spicy sausages and jerky. The smoke and spices take the edge off the gamy taste. The best venison is usually corn-fed (they sell huge sacks of deer corn in the grocery stores) so that the meat isn't tainted by all the nasty tannins found in the acorns that the deer apparently like to eat.

Not much fat and it has a great taste. The neighbors invited me over for dinner a few weeks ago and they cooked up a big pile of hog ribs that were really tasty.

I love Venison cooked with wine for hours it's proper flavorsome meats.

I like wild boar too. They make nice burgers.

I really like the look of what Neil Stuke cooked on Masterchef tonight.

I think there are a few wild boars. They're always reported to be making a comeback, but I'm yet to see one.

Was it better than your mother's speciality of beans on toast with a burger on top?

The hogs we have are descended from pigs that were brought over by Spanish explorers about 500 years ago. They've become quite a nuisance in much of the country. I found one rooting around my garage when I lived in Florida and it was MEAN. I ran back inside as soon as it charged me - those tusks are like razors.
