Any vegetarians out there who could help me to plan a cold light lunch menu? Preferably something that can be prepared the day before. No cold egg, cheese or fish.

I was orignally considering cous cous and cold quiche, but that's no good now.

OK, I can give it a go. If you want quiche, I can get you an excellent vegan quiche recipe. :)

cous cous is a fantastic cold veggie meal. Here's my old favourite:
Fry/roast some mixed veg (courgette, mixed peppers onions and carrots all work a treat. Use olive oil.
Make up your cous cous with water and half a stock cube.
make a sauce form a little (1/2 tsp) Harissa paste, 1 tsp mint sauce and a 1 tbsp of sweet chilli sauce.
Salt and pepper to taste.

To moroccan it up a bit, add chick peas and either sultanas or diced apricot.

Trust me, it's delicious.
