So I'm trying to install Panther, but it ain't taking the disc.
I'm trying to create a backup image on the Mac Mini and then restore it on the laptop. Is there anyway I can create a disk image, without copying 80gb worth o music, photos, etc and just "image" the important operating system file thingys?

If the Tiger disk requires Panther then it is an update disk rather than a system disk. Apple sometimes give these out to users who bought their computer a few months before a new OS comes out. It's not like the system disk that you can buy in a store - that will install on a blank volume - and on any mac computer.
Is the Panther disk from the mac mini? If so that would explain why it won't work in the ibook. The 'system restore' disk you get with the computer is tied to the model it comes with to prevent software piracy. It isn't the same as the system disk you get in a store either.
You can boot the ibook up in target disk mode with the firewire cable and install from the mini, but it may only work with a full stand-alone system disk - not the restore one. Or it might work with either - I've never tried it.
Plug the ibook into the mini, turn on the ibook with 'T' held down on the keypad. The ibook hard disk icon will mount on the mini screen. If you then put a system disk into the mini you will be offered the choice of installing it on either volume/machine.
Obviously if you only want to pull files off the ibook hard disk this mode will work fine.
