I haven't managed to replicate the taste of chips from a chip shop yet, unless you count wrapping it in paper to get that weird steamed effect (works quite well).
But fish should be easy? I can't think of anything particularly special about it? Unless you're thinking of "posh fish n chips" Which normally consists just of beefcut chips

Yeah, cooking the fish is easy. It's just getting the batter right. And the chips are no problem at all. I've been making those for years.
We all know you have to twice fry the chips right?
At two different temperatures...Once to get it fluffy...And twice to get it crisp?
