I've cooked one a week for the last twenty years at least. Plus Christmas and Easter (often for 12 people plus).
My roast potato secret is King Edwards, boil for 10 mins, drain, shake them really hard in the pan, put back on the heat for a sec to dry off the water and then tip into a roasting pan with a bit of vegetable, sunflower or olive oil that's been in the oven for 10 mins. Turn them over in the hot oil and then roast for about 45 minutes. They should be crispy on the outside and fluffy inside.
