A couple of people on courses have told me one of the biggest mistakes comedians make starting out is that they have to keep writing new material, it is far more important to hone your current set by tweaking, adding and changing.
If you see most of the big comedians (as I was lucky to see Sarah Millican twice recently, it's always the same set with occasional tweaks to what works and what doesn't.
My set is basically the same for the past 2 years with additions and tweaks! If it works it stays in, if not it gets replaced.
This is something which is really hard to wrap my head around (I totally believe you and have heard the same thing from others). Just seems odd that I can just take the same 5-10 minutes I have round and round. Still am going to give it a go.
