As I understand it, when the rules were first codified and a central governing body set up, the Football Association, those rules lead to that particular breed of the sport being known as Association Football. The 'soc' of soccer coming from 'association'. I would guess that the original unwritten version of the game (which can't have differed much) then died out as teams became bigger and more popular.
