Two of my favourites:

Woke Up This Morning - Alabama 3 (the theme tune to The Sopranos). Creates the right mood for the show, such a f**king cool song!

Also, the definitive theme tune and one I'm amazed no one's mentioned (at least I think no one's mentioned it yet):

Half The World Away - Oasis (theme tune to The Royle Family)

One of my favourite songs of all time, let alone favourite theme tune.

Awful, dreary, depressing song.
